Herein we report on the use of beta-1-N-acetamido-2- acetamido-2-deoxy-d-glucopyranose, the simple model of the N-glycoprotein linkage region, as a novel acceptor for disaccharide synthesis catalyzed by beta-N-acetylhexosaminidases from Aspergillus oryzae and mung beans (Vigna radiata) under transglycosylation as well as reversed hydrolysis. The exclusive formation of the disaccharide model, beta-d-GlcNAc-(1?4)-d- GlcNAcbetaNHAc, by transglycosylation and the corresponding (1?6) analog under reversed hydrolysis both in reasonable yields demonstrates the versatility of beta-N-acetylhexosaminidase from Aspergillus oryzae. The efficacy of the enzyme from Vigna radiata for synthesis has been demonstrated for the first time. This is also the first report on the use of derivatized sugars as co-reactants in glycosidase catalyzed reversed hydrolysis mode of synthesis. The excellent (1?6) selectivity of mung beans beta-N-acetylhexosaminidase under transglycosylation and that from Aspergillus oryzae under reversed hydrolysis would prove to be very useful.

Scope and approach: In this review, the chemical structures, physicochemical properties and beneficial effects of the active components are summarised. Different encapsulation techniques and tailored shell materials have been investigated to optimise the functional properties of microcapsules. Several encapsulated constituents (e.g., amino acids) have been successfully incorporated into food products while others such as lactic acid bacteria are mostly used in the free format. Encapsulating some of these active ingredients will extend their ability to withstand process conditions such as heat and shear, and prolong their shelf stability. Key findings and conclusions: The functional properties of a microcapsule are encapsulation efficiency, size, morphology, stability, and release characteristics. Several microencapsulation strategies include the use of double emulsions, hybrid wall materials and crosslinkers, increasing intermolecular attraction between shell and core, physical shielding of shell materials, and the addition of certain ions. Other approaches such as the use of hardening agents, nanoencapsulation, or secondary core materials, and the choice of shell materials possessing specific interactions with the core may be used to achieve targeted release of active ingredients. The physicochemical properties of shell materials influence where the active ingredients will be released in vivo. A suitable microencapsulation strategy of active ingredients will therefore expand their applications in the functional foods industry.

For 3 ¡¤ (OTf). the structural parameters, apart from the dmso-O ligand, were essentially comparable to those of 2, except for the axial Cl- ligand; the remaining axial site is occupied by the O-donor of the dmso ligand instead of the S-donor. The solution structures (in DMSO solution) of 1, 2, and 3-(OTf) are discussed on the basis of their 1HNMR spectra. In 3-(OTf), “flapping” of the Hdpa ligand causes the coordination modes (O- and S-bonded) of the two axial dmso ligands to undergo mutual alternation.
